STEP 1:

Place frozen peaches, frozen banana, and coconut milk in a food processor or high-powered blender.

STEP 2:

Process the nice cream for about 1 minute, until the texture looks like creamy ice cream. You may have to stop processing the nice cream midway to scrape the ingredients down the sides once or twice. Note: It will look like it’s not going to turn into an ice cream texture, but it magically transforms at almost the minute mark of processing it!

  • Be sure to use full-fat coconut milk – To make sure it’s creamy enough, use full-fat coconut milk or coconut cream. I like to make sure it’s unsweetened to keep this recipe a no added sugar recipe.
  • Frozen banana – Before you freeze the banana, peel it and either break it into thirds or cut it into slices. If you freeze the banana whole, it will be hard to blend.
  • Eating leftovers – You’ll need to think ahead and either thaw it on the counter for a while or you can thaw it in the microwave for 30 seconds – 1 minute to help it soften up before you eat it.

Storage & Reheating

  • Freezer: Store leftovers in a freezer-safe airtight container for up to 3 months. 
  • Thaw: If you don’t eat all of the peach nice cream the day of and end up freezing it, you’ll need to thaw it at room temperature for it to soften up enough to eat it. You could also microwave it (if your ice cream container can go in the microwave) for 30 seconds to 1 minute to help it soften.

  • Lemon Juice: If you want a little extra zing, you could try adding a little bit of lemon juice.
  • Raspberries/Any Berry: You could make use of summer berries, like raspberries or blackberries, and throw them in, too!

Substitutions:

  • Coconut Milk: You can substitute coconut cream here, nut milk, or even regular milk (keeping in mind that the recipe will no longer be vegan).
  • Peaches: Nectarines are a great replacement! Or, swap out for your favorite fruit! You could even make Peanut Butter Banana Nice Cream by omitting the peaches and adding about 1/4 cup peanut butter (more or less depending on your love for peanut butter) instead!

It doesn’t look like the nice cream is going to turn into an ice cream texture as I’m processing it. Is this normal?

Yes! For me, it didn’t turn into an ice cream texture until about 1 minute of being processed. Be patient!

Should I use frozen peaches and banana or can I use fresh?

Use frozen fruit! This helps the nice cream get its creamy texture vs. a smoothie texture. If you have fresh peaches, you can slice them and place them in a single layer on a baking sheet lined with parchment paper to freeze them before making this recipe.
