Hi! My name is Kaileigh (pronounced kay-lee) and am the creator of Supermom Eats!
I am a busy mama to two little boys, a wife, and a former special education teacher. Here you will find simple, healthy vegetarian recipes that you can have ready to share with the whole family in 30 minutes or less…for the supermom in you.
I started Supermom Eats in 2018, during my maternity leave with my first son, when I realized that it was a herculean effort to get a healthy meal on the table for my family when taking care of a baby. At the time, I was a Special Education Teacher, and when I went back to work after my leave I saw what an even greater challenge it was to get dinner on the table. I was exhausted at the end of the day and my little guy would reach the “witching hour” when we got home and it was time for me to cook.
Cooking dinner became a very stressful and almost impossible feat each night. I knew other moms must be facing similar challenges whether they worked in or out of the home. I knew there had to be a better way! Since then, I’ve been developing simple, healthy recipes that can be ready to serve in 30 minutes or less, giving me and my readers many easy and manageable dinner choices.
I believe strongly in the importance of having a family meal together as a way to come together as a unit and as a form of connection and groundedness. I also strive to feed my family a (mostly!) healthy diet so that we can all thrive. If these are things that you want for your family too, I hope that my blog can help you achieve them more easily.
