Our local farm just announced that their raspberry u-pick has begun! I absolutely love raspberries, so I knew I had to go and bring my toddler berry picking AND I had to make some kind of sweet treat with them.

I decided on Healthy Raspberry Bars. Raspberry Bars, or any type of fruit bar really, are one of my favorite desserts. The problem with them though is that they are usually loaded with sugar! My mission was to create a healthy version of a raspberry bar. 

I love my Vegan Thumbprint Cookies With Raspberry Chia Jam so much, as well as my 5-Minute Raspberry Chia Seed Jam that I use for them, that I thought I could modify the recipe to achieve my Healthy Raspberry Bar mission.

And it worked!

I replaced the almond flour of my thumbprint cookies with instant oats and it worked beautifully. I also added an Oatmeal Crumble topping which is completely optional. To make these Healthy Raspberry Bars healthier, you can omit the Oatmeal Crumble topping and they will still taste heavenly!

How to Make Healthy Raspberry Bars

  • Make the Raspberry Chia Seed Jam in advance or use store-bought jam (though these are usually packed with sugar). 
  • Preheat the oven to 350 degrees Fahrenheit and line an 8×8 baking dish with parchment paper. Set aside.
  • In a large bowl, mix oats, flour, salt, and baking powder until combined.
  • In a small bowl, mix coconut oil, almond milk, maple syrup, almond extract, and vanilla extract together.
  • Fold wet ingredients into the dry ingredients and mix well.
  • Transfer dough onto the parchment paper and spread out evenly to cover the whole dish. You will probably need to use your fingers to spread and flatten it enough to be able to reach all the sides. 
  • Spread raspberry jam evenly over the dough.
  • Make the (optional) crumble topping by combining all of the crumble ingredients.
  • Sprinkle the crumble mixture on top of the raspberry jam.
  • Bake in the oven for 15 minutes. Allow bars to cool and firm up a bit and then enjoy! I recommend cutting them into small squares, as they are on the softer side and this will make them easier to eat!

Can I Make These Gluten-Free?

To make them gluten-free, you can try swapping the instant oats for gluten-free oats and replacing the flour with 1:1 Gluten-Free Baking Flour.

Healthy Raspberry Bars

Yield: 18 small bars
These Healthy Raspberry Bars are vegan, low in sugar, and ready in just 30 minutes! They're easy to make and heavenly to eat!

Ingredients
 

  • 1 cup raspberry chia seed jam*, (or use store-bought jam)
  • 1 cup instant oats
  • 1 cup flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup coconut oil, melted
  • 2 tablespoons unsweetened plain almond milk
  • ¼ cup maple syrup
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract

Oat Crumble Topping

  • ¼ cup flour
  • 1 cup instant oats
  • ½ cup coconut oil, melted
  • ¼ cup coconut sugar

Instructions
