These savory, vegan, and gluten-free Chickpea Pancakes are heavenly! They’re customizable and freezer-friendly – perfect for the whole family on busy mornings!

On Saturday mornings, my husband almost always rubs his hands together as if he is plotting something, and says to me, “Mmmm, should we have some chickpea pancakes??!” This, of course, does not come with an offer to actually make the pancakes but is more of a request that I make them. After I prepare them and we are sitting down to eat, my husband ravenously devours them with a smile on his face the whole time. So worth it.
The beauty of these pancakes is that they are like a blank canvas. There are endless possibilities of what you can add to them.
I personally love to add leeks, spinach or kale, and whatever delicious cheese I have on hand. I add these ingredients to the pancake after I pour the batter into the pan. This way, the cheese becomes fried and crispy when I flip the pancake over. Mmmmmmm….fried cheese….
When the pancake is finished cooking, I like to top them with cilantro, melted butter, a fried egg, and a little bit of hot sauce. Sometimes I top it with a little maple syrup as well, to create a sweet and salty taste.
These pancakes are perfectly satisfying and filling. I am a pancake lover, but prefer these to normal pancakes any day!
Meal Prep Tips
I like to quadruple the recipe over the weekend so that we can have leftovers. I customize each pancake according to how each person likes theirs. Once the pancakes have cooled, I stack them in a freezer-safe bag, placing a piece of parchment paper between each pancake so they don’t stick to one another. Then, I store them in the freezer until I’m ready to serve them.
To reheat, microwave for 2 minutes until heated through. This makes such an easy breakfast for busy weekday mornings!
Time Saving Tip
I like to have two frying pans going at once so that the pancakes are ready at the same time, since they take a little while to cook on each side.

Chickpea Pancakes (Gluten-Free + Vegan)
Ingredients
- ½ cup chickpea flour
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- Lemon pepper or black pepper, to taste
- ½ cup water
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
Instructions
- Heat a frying pan over medium heat and add olive oil to coat the pan.
- In a large bowl, mix together chickpea flour, baking powder, salt, and pepper.
- Add water and maple syrup to the dry mixture and stir to combine.
- Pour the batter into the heated pan to form one large pancake.
- Sprinkle your choice of toppings onto the uncooked batter (see suggestions below).
- Cook for about 4 minutes, or until bubbles start to form and the bottom is golden brown.
- Lightly spray the top of the pancake with cooking spray, flip it, and cook for another 3 minutes or until golden brown.
- Serve hot with your favorite toppings!
Notes
Serving suggestions: top with melted butter, cilantro, a fried egg, slivered almonds, a little maple syrup, or hot sauce.
