- Pasta: I use Banza chickpea linguine pasta in this recipe. Feel free to use whatever pasta you’d like, just note that the cooking time and amount of liquid needed may vary.
How to Make One Pot French Onion Pasta: STEP-BY-STEP

STEP 1:
Heat a braiser or large pot over medium heat and add olive oil and sliced onions.
STEP 2:
Sauté onions for approximately 12 minutes, stirring frequently, until they are very soft and have started to turn a golden brown color (caramelized onions can take up to an hour, so we’re just barely caramelizing them here to save time!). Add the balsamic vinegar and mushrooms and continue to sauté for about 3-4 minutes.
STEP 3:
Add uncooked pasta, vegetable broth, and white wine. Cover and cook pasta until al dente, about 15 minutes. Stir every once and a while to ensure pasta doesn’t stick to the bottom of the braiser. Pasta will absorb most of the liquid.
STEP 4:
Turn heat off. Add gruyere cheese and stir to combine. Season with a little more salt or parmesan cheese if desired. This dish is best when served right away!
Recipe Tips & Tricks
- Serve immediately – For best results, serve this creamy french onion pasta right away! It still tastes delicious when served as leftovers, but you may need to add some olive oil, a little vegetable broth, or cheese to make it creamy again.
- Stir onions frequently – Be sure to stir the onions frequently to make sure they don’t stick or burn on the bottom of the braiser.
- Add more liquid if needed – If the pasta is using up all of the liquid too quickly, add a little more vegetable broth or simply water if needed. The amount of liquid needed may vary depending on what pasta you use. I used Banza chickpea linguine pasta for this recipe.
- Serving to kids – When I serve this to my kids, I serve just the linguine noodles and pick out the mushrooms (don’t worry, this is very easy and quick to do). I did manage to keep the onions in their pasta because they weren’t as easily detected. I’m also sure to serve some veggies on the side for them such as steamed broccoli or baby carrots.
- Add protein – I love topping my pasta with Roasted Chickpeas! You could also try Crispy Tofu made in the air-fryer or in a pan. If your family eats meat (like my husband and boys do), you could add sausage or ground beef for some added protein.
Storage & Reheating
- Fridge: Store leftovers in an airtight container in the fridge for 3-4 days.
- Reheating: When reheating, you may need to add some olive oil, a little bit of vegetable broth, or cheese to make it creamy again!

Additions:
- Veggies: Feel free to add some of your favorite veggies to this dish such as spinach or zucchini!
- Protein: roasted chickpeas, crispy tofu, bacon, sausage, chicken sausage, grilled steak, or ground beef/ground turkey. Lots of protein options!
- Herbs & spices: Top with fresh thyme, fresh parsley, and black pepper.
Substitutions:
- Broth: You can substitute the vegetable broth for chicken broth or beef broth if this fits into your diet.
- Cheese: You can opt for a vegan/dairy-free cheese if needed.
- Pasta: You can use any type of pasta you prefer! Just note that the cooking times may vary depending on what you use.
- White Wine: If you can’t have white wine or don’t have any on hand, you can replace the white wine with 1/2 cup vegetable broth + a squeeze or two of lemon juice or white wine vinegar (start with about 1 tablespoon of lemon/white wine vinegar and add more to taste if needed)
- Balsamic Vinegar: Sherry vinegar works here as well.

Nope! The best part about this recipe is that it’s a one-pot pasta dish! Cook the pasta in the same pot as the onions. You’re using the balsamic vinegar, vegetable broth, and white wine as the liquid to cook the pasta.
Sure! Gruyere cheese is traditionally used for French Onion Soup, but you can replace it with something like Fontina, Jarlsberg, Comte, or even an Aged Sharp Cheddar.
I use a (very cheap) Pinot Grigio. A Sauvignon Blanc would be another good dry white wine to use.
