These Apple Banana Oat Toddler Muffins are SO easy to make and are such a perfect, healthy snack for little hands…and big (adult) hands! They are just sweet enough and have a subtle taste of cinnamon.

I actually developed this recipe for Ty’s first birthday several months ago. We are not giving him artificial sugar yet, so I wanted something that we could put a candle in that would serve as a “cupcake” for him. I decided to combine two of his favorite things: applesauce and banana.

At Ty’s birthday, I displayed his Apple Banana Oat Muffins alongside some other adult desserts, but accidentally failed to make the distinction clear. People started coming up to me saying, “Kaileigh, these muffins are great!” which was followed by my startled and awkward response, “Muffins? What muffins? Oh, ummm, yeah, those are toddler muffins…for Ty, not adult muffins. Forgot to label the desserts! My bad.” Phew! I felt like I accidentally gave people a dog treat. Luckily, they were very well-received! This mishap also made me realize that these muffins could in fact make a great adult snack! As a matter of fact, I began making them and bringing them to work with me for a morning snack and they were wonderfully satisfying!

These Apple Banana Oat Muffins are vegan, refined sugar-free, and dairy-free! You can also make them gluten-free by using gluten-free oat flour. I love that they are filled with fiber and nutrients, so I know that I am feeding my baby something with wholesome ingredients.

They are the perfect consistency for a toddler who does not have all of their cute little baby teeth yet, as they are firm on the outside, but soft on the inside. I give these to Ty as a snack after his nap or pack it in his lunch box to send to daycare where they get devoured. They can even be enjoyed in the open trunk of your car in the parking lot of the pediatrician’s office after your little one gets his shots. It definitely made Ty feel better.

These Apple Banana Oat Muffins are just sweet enough and have a subtle taste of cinnamon. They feel good for you, but in a flavorful way! An added bonus: they make the house smell A-mazing!

I most recently whipped them up while my husband was putting Ty down for bed. That’s how quickly they come together! They cooked in the oven while I folded my laundry (I’m trying out the Marie Kondo method and loving it!) and wala, a healthy snack ready to go for tomorrow for Ty Ty.

To make them, simply mash a banana in a large bowl and mix in applesauce, oat flour, baking powder, baking soda, cinnamon, and a little salt. Scoop approximately ¼ cup of the mixture into each muffin cup. I like to sprinkle some rolled oats and cinnamon on top of mine. Pop these bad boys in the oven at 400 degrees for 13 minutes and enjoy!

Notes

These would be great with blueberries added in!
Making Oat Flour: If you are making your own oat flour, pulse rolled oats in a blender until mostly ground. I prefer grinding my own oats versus store-bought oat flour.
If you are eating this as an adult snack, they are really good when they are served warm with melted butter and a hot cup of coffee or tea!
