This Tortilla Omelette tastes like quiche without ever turning on the oven! It is completely customizable to whatever you have on hand and is one of my favorite high protein breakfast recipes.

Quiche is honestly one of my favorite breakfast recipes, so I was really excited to create this one! I eat mostly gluten free now, so I wanted to create something that was similar to quiche, but that gluten-free, that didn’t have to be baked in the oven, and that still felt supportive of my health goals.

This is the kind of breakfast I make when I have a little more time in the morning. I also love meal prepping my sheet-pan protein pancakes for when we’re traveling or want breakfast ready to go on a busy morning.

You’ll need the following ingredients to make this Breakfast Omelette:

Ingredient Notes

  • Egg Whites: Using a mix of whole eggs and egg whites gives you extra protein, without adding more fat. You can use all whole eggs if that’s what you have on hand.
  • Feta Cheese: Feta gets a little creamy as it warms and adds so much flavor without needing extra seasoning. You can swap it for goat cheese or shredded cheddar if you prefer.
  • Almond Flour Tortilla: This is what gives it that quiche omelette feel! I use an almond flour tortilla (sometimes I use two!) because it is gluten-free and it holds up really well inside the eggs. 2 tortillas will give you even more of a quiche-like feel.
  • Leeks: Leeks have a milder, slightly sweeter flavor than onions, which I love here. If you don’t have leeks, diced shallots or green onion work great as a swap. Really, you can use any veggies you have on hand!

Additions

  • Diced chicken sausage or bacon: If you eat meat, adding diced chicken sausage or bacon inside the omelette or on the side is a really delicious addition.
  • Spinach or mushrooms: Add a small handful of spinach or some diced mushrooms for extra veggies.
  • Hot sauce: A little drizzle on top is so good!
  • Tahini: I love a drizzle of tahini on top of my eggs and love the extra nutrients!

Substitutions

  • Veggies: You can use any veggies you like or have on hand here!
  • Feta: Goat cheese or shredded cheddar both work great.
  • Tortilla: Any tortilla works here – corn, flour, or cassava all do the job, though I’ve found the almond flour tortillas to have the most similar taste to quiche.

How to Make Tortilla Omelette: Step-by-Step

Step 1: In a small bowl, whisk together the egg whites and eggs until combined.

Step 2: Heat a medium-sized pan over low heat. If using a stainless steel pan, let it warm up for about 2 minutes first. Add butter or avocado oil spray. Pour the egg mixture into the pan. Sprinkle leeks and bell pepper evenly over the top. Cover and cook on low heat for about 4 minutes.

Step 3: Add feta cheese evenly over the eggs. Place the almond flour tortilla on top and cover again. Let cook for another 1-2 minutes.

Step 4: Using a spatula, flip one half of the omelette over the other half. Cook for one more minute with the lid on, then turn off the heat. Carefully slide the omelette onto a plate and enjoy!

Recipe Tips & Tricks

  • Keep the heat low: Low and slow is the way to go here. Cooking over low heat gives the eggs time to set without browning on the bottom or getting stuck to the pan. Be patient – it is so worth it!
  • Use a pan with a lid: The lid is really important for this recipe. It traps the heat and helps the eggs cook through evenly so you don’t have to flip any raw eggs.
  • Use 2 tortillas for extra quiche vibes: If you really want to lean into that quiche flavor and texture, place 2 tortillas on top of the eggs instead of one. It makes it even thicker and more satisfying.
  • Make it your own: Swap in whatever veggies you have on hand. This recipe is really flexible! Add meat if that sounds good to you and your diet allows.

Meal Prep & Storage

  • Meal Prep: You can dice your leeks and bell pepper (or any veggies you’re using) a few days ahead and store them in an airtight container in the fridge. That way, when you’re ready to make this, it comes together a little faster.   • Fridge: Store leftover omelette in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in the microwave for about 30-45 seconds or until warmed through. You can also reheat it in a pan over low heat for a couple of minutes.

Frequently Asked Questions

Can I use all whole eggs instead of egg whites?

Of course! You can use all whole eggs if you prefer. The texture will be a little richer. It would be equivalent to 4 whole eggs in terms of protein.

What kind of tortilla works best?

I use an almond flour tortilla because it is gluten-free and has a great texture for this recipe. You can use any tortilla though. Use 2 if you want it extra thick and quiche-like!

Can I make this dairy-free?

Yep! Swap the butter for avocado oil spray and use a dairy-free feta or skip the cheese altogether. It will still taste really good.

My eggs are browning on the bottom. What happened? 

The heat was probably a little too high! This recipe really does work best over low heat.

Can I add meat to this? 

Yes! Cooked diced chicken sausage, breakfast sausage, or bacon folded in is a really delicious addition if you eat meat.
