Friday night is Pizza Night in our family. For me, Pizza Night is fun, relaxing, and indicates a shift to weekend energy. This Eggplant Pizza is a great way to change things up from the usual pizza and a way to get more veggies on your plate!

I’ve been experimenting with different types of pizza doughs each week to keep things spicy. I’ve tried almond flour crust, broccoli crust, Trader Joe’s pizza crust, pita bread, and plain ol’ frozen pizza. 

This week, we’re trying something new in an effort to incorporate more veggies into our plates! Eggplant Pizzas. Yep, you read that right. This week I am using eggplant as the “pizza crust”. No bread (which is my very favorite part of a pizza!)…And guess what? They turned out SO good!!

The eggplant pizza “crust” is made by coating the eggplant slices in an egg wash followed by Panko bread crumbs and then parmesan cheese. You simply bake these for 15 minutes, then add your pizza toppings and bake for another 5 minutes, and voila! Friday (Eggplant) Pizza Night is ready! It pairs well with a family movie (and red wine). 😉

I love that these Eggplant Pizzas are like mini pizzas because they’re perfectly sized for our toddler. My husband commented multiple times about how much he loved them as well as how he liked that they were firm enough that he could actually pick them up with his hands like a regular pizza. 

Eggplant Pizza Ingredients

  • Eggplant 
  • Eggs 
  • Panko breadcrumbs
  • Parmesan cheese
  • Ppre-made marinara or pizza sauce
  • Shredded mozzarella cheese
  • Your choice of pizza toppings! (I like red onion, basil, olives, artichoke, tomatoes, and spinach)

Serving Suggestions

  • Top your pizzas with any of your favorite toppings! 
  • For my toddler, I like to keep it simple and only top his with cheese. I love that the base of this pizza is a vegetable, so I can feel good about only topping his pizza with cheese! 
  • Some of my favorite toppings are red onion, basil, artichokes, spinach, mushrooms, tomatoes, and olives. 
  • I also like to serve our Eggplant Pizzas with roasted chickpeas on top for some protein and a nice little crunch.
  • These Eggplant Pizzas make great little appetizers or an after-school snack!

Eggplant Pizza

Yield: 12 mini pizzas
Eggplant Pizza is a delicious way to incorporate more veggies into your family dinners. Make some for a fun Family Pizza Night!
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients
 

  • 1 small eggplant, cut into ½ inch rounds
  • 2 eggs, whisked
  • ½ cup Panko breadcrumbs
  • ½ cup parmesan cheese
  • ¾ cup pre-made marinara or pizza sauce
  • 1 ½-2 cups shredded mozzarella cheese
  • Your choice of pizza toppings!, (I like red onion, basil, olives, artichoke, tomatoes, and spinach)

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • Slice the eggplant into 1/2 inch rounds.
  • Prepare three small bowls – one with whisked eggs, one with parmesan cheese, and one with Panko breadcrumbs.
  • One at a time, fully submerge each eggplant slice in egg wash, then coat in Panko breadcrumbs on both sides, and then coat in parmesan on both sides. Place each coated eggplant round on baking sheet and repeat with each eggplant round.
  • Bake in the oven for 10 minutes, then flip the eggplant rounds and bake for another 5 minutes.
  • Remove eggplant rounds from the oven to add your toppings.
  • Spread approximately 1 tablespoon marinara or pizza sauce on each round, followed by mozzarella to cover each round. Add any additional toppings of your choice.
  • Bake for another 5 minutes or until cheese melts.
