Your choice of pizza toppings!, (I like red onion, basil, olives, artichoke, tomatoes, and spinach)
Instructions
Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
Slice the eggplant into 1/2 inch rounds.
Prepare three small bowls – one with whisked eggs, one with parmesan cheese, and one with Panko breadcrumbs.
One at a time, fully submerge each eggplant slice in egg wash, then coat in Panko breadcrumbs on both sides, and then coat in parmesan on both sides. Place each coated eggplant round on baking sheet and repeat with each eggplant round.
Bake in the oven for 10 minutes, then flip the eggplant rounds and bake for another 5 minutes.
Remove eggplant rounds from the oven to add your toppings.
Spread approximately 1 tablespoon marinara or pizza sauce on each round, followed by mozzarella to cover each round. Add any additional toppings of your choice.
