I don’t really like sweet potatoes…but I know they’re good for you. So, I’ve been trying to disguise them to trick myself into actually eating them.

Therefore, this Sweet Potato Tater Tot recipe serves two purposes: 

1. It gets me to eat sweet potatoes.

2. It gets my kids to eat sweet potatoes.

My little 1-year-old nugget is obsessed with these little sweet potato nuggets. They are great for Baby-Led Weaning

I realized that my 3-year-old actually hasn’t even tried a regular tater tot, so he didn’t know what these were and was not interested in trying them..for now. I’ll keep at it! I feel that you may have more success if you’re kids have actually tried and liked regular tater tots before! They do make a great packable and nutritious snack for school lunches (for adults, too!)!

A Healthy Snack Food

I’ve packed a punch in these Sweet Potato Tater Tots! Inside these delicious morsels, you’ll find chickpeas and hemp seeds to help you and your kids get some protein and omegas. We like to dip our Sweet Potato Tater Tots in Halo + Cleaver Ketchup because there is no added sugar like you will find in typical ketchup. 

I love that these Sweet Potato Tater Tots can be made ahead of time and then added to a school lunch box with some ketchup or ranch and you have a balanced snack for your child!

Flour Choice

For this recipe, don’t make the same mistake I did and make it with whole wheat flour. I just keep having the false hope that whole wheat flour will do me a solid and taste good, since it’s better for you than regular flour, but nope, it just doesn’t taste very good. 

Moral of the story: make these with regular flour or get organic unbleached wheat flour from Trader Joe’s like I do, since it tastes pretty much the same as regular white flour.

If you want to make this gluten-free you can replace the flour with a Gluten Free 1:1 Baking Flour like Bob’s Red Mill Gluten-Free 1:1 Baking Flour.

How to Make Sweet Potato Tater Tots

Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

In a small microwave-safe bowl, cover sweet potatoes with water and microwave for 4-5 minutes until soft. Carefully, strain the water after they’re done cooking.

In a food processor, process all of the ingredients until well combined.

Scoop a tablespoon of the mixture out and use your fingers to shape it into a tater tot. Place on the lined baking sheet. Repeat process to form the remaining tater tots.

Bake in the oven for 10 minutes. Flip the tater tots and bake for another 5 minutes.

How to Make Sweet Potato Tater Tots Vegan

You can try replacing the egg with a flax egg by combining 1 tablespoon of flaxmeal with 2 tablespoons of water and letting it sit for about 5 minutes to coagulate. You will also need to replace the parmesan cheese with vegan parmesan cheese. If you want to make your own, I recommend Minimalist Baker’s vegan parmesan cheese recipe.

Give Them a Parmesan Crusted Coating!

I actually like to make these with a parmesan-crusted coating to add some extra flavor! This is definitely an optional step. To do so, put some grated parmesan cheese in a bowl and simply roll each tater tot in it to coat. Then, bake them in the oven as you would without the parmesan coating. That’s it!

Sweet Potato Tater Tots

Yield: 30 tater tots
These Sweet Potato Tater Tots are a healthy, protein school snack filled with chickpeas and hemp hearts! They're perfect for baby-led weaning, too!

Cook Time: 15 minutes
Total Time: 30 minutes

Ingredients
 

  • 3 small sweet potatoes, peeled and diced
  • 1 – 15.5 ounce can chickpeas, garbanzo beans, drained and rinsed
  • 1 egg
  • ½ cup parmesan cheese
  • 1/4 cup flour, I like Trader Joe’s Organic Unbleached Wheat Flour
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ cup Panko breadcrumbs
  • ½ teaspoon thyme
  • 3 tablespoons hemp hearts

Instructions

Notes

Serve with ketchup or your favorite dipping sauce! We like using Halo + Cleaver ketchup because there is no added sugar and it tastes just like ketchup, but better!
