The other day, my husband asked me if I could make chia pudding as a healthier dessert for us. I’ve actually never been super into chia pudding, so I was not very interested in making it. Of course, marriage is about sometimes doing things purely out of love, right? Alas, I made the chia pudding.

And then I made it the next night. And the next night. And the next night. This Peanut Butter Chocolate Chip Chia Pudding turned out SO good, I have been looking forward to it every single night as a little sweet treat after dinner! Low and behold, my tune about chia pudding has changed and I’m excited to share this recipe with you!

I love that this Peanut Butter Chocolate Chip Chia Pudding is very low in sugar (particularly if you omit the chocolate chips) and is high in protein due to the added peanut butter. I am ALL about the flavor combination of the peanut butter mixed with vanilla, topped off with chocolate chips. It is a very satisfying and filling treat at the end of the day. It even makes a great breakfast if you omit the chocolate chips!

How to Make Chia Pudding

This recipe is so easy to make! You can make it two different ways:

1. In a blender, blend all ingredients together except for the chocolate chips. Pour into a sealable jar or cup and place in the refrigerator for about 1 hour (or until the chia seeds have begun to gel up). Top with chocolate chips and enjoy!

2. If you don’t want to use a blender, you can simply stir the ingredients in a jar or cup, refrigerate for about 1 hour, and then add the chocolate chips. The peanut butter is just a little hard to combine fully when manually stirring, so it will be a little more chunky (unless you’re very good at stirring 😉 ).

Dietary Information

This recipe is both vegan and gluten-free, assuming you use vegan and gluten-free chocolate chips. Enjoy Life is a brand that carries chocolate chips that are free of the top allergens, though they are more expensive than regular chocolate chips.

If peanut butter is not something you or your family can or choose to eat, you can replace the peanut butter with any other nut butter, sunflower butter, or just remove the peanut butter element altogether.

I’ve served this to my toddler without the chocolate chips since we don’t give him much sugar. He absolutely loved it! I hope this recipe gives you a healthier dessert, breakfast, and/or snack option for you and your family!

– If you’re like me and don’t want to wait for an entire hour to eat the chia pudding, it tastes just as delicious after 5-10 minutes in the refrigerator. The consistency just won’t be as firm since the chia seeds will not have had enough time to work their magic.”][/vc_column][/vc_row]
