This Healthy(ish) Apricot Date Galette is a healthy, yet elegant, dessert alternative that the whole family is sure to enjoy!

Quick! Apricot season is nearing an end. You HAVE to make this Healthy(ish) Apricot Date Galette before the season is over so you don’t have to wait until next year. It’s just too delicious and deserves to be eaten now! I’ll try to make this a little shorter than normal so you can just hurry on up and start making this recipe before all the apricots run out.

The Impetus

We have an apricot tree in our backyard, though I think it has only produced a total of six apricots in the three years we’ve lived here. Some of which the birds got, some of which Ty yanked off before they were ready yelling “Apple! Apple!”, and then those two we actually got to enjoy. Luckily, my friend has a REAL apricot tree that is producing a ton of apricots, which she so graciously gave me free rein to. 

Having an abundance of apricots, no thanks to our tree, and an unrelated dessert request from my mom, I knew I had to come up with something featuring apricots. And oh did it turn out good.

How This Recipe Can Help You

To be frank, it will leave people feeling impressed with you. I feel like we could all use a little ego boost here or there. 

You have little ones to take care of, a household to manage, and maybe a job outside of the home to manage as well….yet somehow, you arrive at a party (whenever those will be again) or to your own dinner table with a miraculous, fancy, beautiful, and heavenly Healthy(ish) Apricot Date Galette. You’re amazing. How did you pull this off?! That’s obviously what people will be thinking and saying. So if you want people to tell you how amazing you are, make this recipe. 

In all seriousness though, this is a fairly healthy dessert, as far as desserts go. If your family reaches for this dessert versus a more artificial and sugary one, I’d say that is a success! You are providing your family a healthier option that they can still take delight in. Here are some other great things about this recipe:

  • The only added sugar is one tablespoon of coconut sugar. The galette is naturally sweetened with the dates and the apricots themselves (NOTE: Make sure to use very ripe apricots because they will be the sweetest and ensure a sweet enough galette).
  • The ingredient list is small and the recipe itself is so simple, it just exudes natural and simplistic, yet elegant living. I am ALL about that.
  • While the galette takes about 20 minutes to cook in the oven, it only takes about 18 minutes to prepare, and the prep is very easy.
  • Though Ty is not allowed to have sweets yet, I feel okay giving him a little bit of this. He loves “apples” after all. 

HEALTHY TIP: If you are trying to avoid pie crust or are gluten-free, another option could be to top a bowl of (GF) oatmeal with the apricot and date compote (with or without the ricotta mixture – to make it gluten-free, do not include flour) to make a yummy, fiber-rich breakfast!

How to Make This Healthy(ish) Apricot Date Galette

1. Heat coconut oil in a pot over medium heat and add in chopped dates and apricots, stirring frequently, until they become soft and develop into more of a compote/paste consistency, approximately 10-12 minutes. I like to help it along by smashing the apricots and dates a little with a rubber spatula. 

PRO TIP: Make sure to use very ripe, preferably SOFT apricots for the apricot and date mixture. They need to be this way for two reasons: 1) They are much sweeter and more flavorful this way, versus tangy and not sweet, and 2) the compote will take forever to make otherwise; this way is pretty quick! If you do not have ripe enough apricots, you will need to spend more time cooking down the apricot and date mixture (upward of 20 minutes) and you may need to add some honey to the ricotta mixture or drizzle it on the galette when it comes out of the oven to make up for the lack of sweetness the apricots are providing. 

2. In a medium bowl, mix ricotta, coconut sugar, and flour together and spread out the mixture on the pie crust. Spread it almost all the way to the edges, leaving about a centimeter gap.

3. When the apricot and date mixture is ready, spread it out evenly over the pie crust, again leaving a centimeter gap from the edges. 

4. Fold the edges of the pie crust over about an inch. It does not have to look perfect! It should have a more rustic look. Part of achieving the “rustic” look, is that it actually does not look perfect, just simply done (in an elegant way).

5. Layer on the remaining apricot slices in any pattern you want. To save you time, either layer them in rows or dice the apricots instead and just sprinkle them on until you’ve covered the galette. Easy peasy!

6. Brush the edges of the crust with egg wash and pop this beauty in the oven for 20 minutes or until cooked through. If the edges of the pie crust brown too quickly, cover the edges with aluminum foil to finish baking it. 

7. Let cool and then devour!

  • 5 small apricots diced (preferably soft apricots) + 5 small apricots sliced for topping (easier to use slightly firmer ones for the topping)
  • 5 dates chopped
  • ⅓ cup low-fat ricotta
  • 1 tbsp. flour
  • 1 tbsp. [url href=”https://amzn.to/2WD2rfX” target=”_blank”]coconut sugar[/url]
  • 1 egg beat for egg wash
Instructions
  1. Defrost the pie crust according to package instructions.
  2. Preheat oven to 400 degrees.
  3. Heat coconut oil in a pot over medium heat.

  5. Meanwhile, lay defrosted pie crust on a baking sheet lined with parchment paper, spreading it out slightly and mending any cracks.
  6. In a medium bowl, mix ricotta, coconut sugar, and flour together and spread out the mixture on the pie crust. Spread it almost all the way to the edges, leaving about a centimeter gap.
  7. When the apricot and date mixture is ready, spread it out evenly over the pie crust, again leaving a centimeter gap from the edges.
  8. Fold the edges of the pie crust over about an inch.
  9. Layer on the remaining apricot slices in any pattern you want (best to use any firmer ones for this so that they’re easier to slice nicely). To save you time, either layer them in rows or dice the apricots instead, sprinkling them on until you’ve covered the galette.

Notes
1. If you have big apricots, you will need about seven instead of 10 total.[br]2. If your apricots are not on the softer side, and therefore not super sweet yet, I recommend that you add honey either to the ricotta mixture or drizzle it on top when the galette comes out of the oven.
