These savory, vegan, and gluten-free Chickpea Pancakes are heavenly! They're customizable and freezer-friendly - perfect for the whole family on busy mornings!
Heat a frying pan over medium heat and add olive oil to coat the pan.
In a large bowl, mix together chickpea flour, baking powder, salt, and pepper.
Add water and maple syrup to the dry mixture and stir to combine.
Pour the batter into the heated pan to form one large pancake.
Sprinkle your choice of toppings onto the uncooked batter (see suggestions below).
Cook for about 4 minutes, or until bubbles start to form and the bottom is golden brown.
Lightly spray the top of the pancake with cooking spray, flip it, and cook for another 3 minutes or until golden brown.
Serve hot with your favorite toppings!
