In a small bowl, whisk together avocado oil, egg, water, and honey. Set aside.
In a medium bowl, mix flour, coconut sugar, baking powder, cinnamon, and salt together.
Pour wet ingredients into the dry and mix well so that a dough forms.
Place a large piece of parchment paper on top of a large cutting board. Place dough on top.
Slice dough in half and start spreading it out with your fingers slightly.
Place another large piece of parchment paper on top of the dough and using a rolling pin, roll the dough out so that it is fairly thin.
Shape the dough into a rectangle (if you want perfect looking shaped graham crackers) and slice into smaller rectangles to form your crackers.
Pierce each cracker with a fork several times.
Slide the parchment paper with the graham crackers on top onto a baking sheet.
Repeat this process with the remaining dough.
Bake in the oven for approximately 16 minutes or until graham crackers are mostly browned. You don’t want to under cook these because they will be too soft.
