In a large bowl mix the mashed potatoes, green onions, cheese, flour, and egg until well combined.
Heat olive oil in a large skillet over medium heat. Meanwhile, using your hands, form mashed potato patties with the potato mixture and place each one in the skillet. Cook for approximately 5 minutes on each side or until golden brown.
