Delicata Squash Pancakes

These pancakes are the perfect combination of sweet and savory! Prep them ahead of time for an easy on-the-go breakfast during a busy week!

Ingredients

arrowroot flour

roasted delicata squash
,
mashed
¼

salt
Pepper to taste
½
cup
parmesan cheese
1
leek diced
1
egg
1
teaspoon
olive oil
Instructions
Scoop roasted delicata squash out of the skin and place in a medium sized bowl.
Mash delicata squash.
Heat pan on medium heat with olive oil.
Add all remaining ingredients to the delicata squash and mix well.
Scoop a spoonful of the squash mixture onto the pan and use a spoon or spatula to shape it into a circle.
Flip your pancake over after about 5 minutes or until the bottom is firm and golden brown.
Cook for another 4-5 minutes on this side, or until golden brown.
Notes
Serve with a fried egg on top for some extra protein!
