1cupoat flour*, (or 1 1/2 cup rolled oats if you are grinding them yourself)
1tsp.cinnamon
1 1/2tsp.baking powder
1/2tsp.baking soda
1/8tsp.salt
Instructions
Preheat oven to 400 degrees Fahrenheit. Place 10 non-stick muffin liners in a muffin tin and set aside.
In a large bowl, mash the banana.
Add in the remaining ingredients and mix well.
Scoop 1/4 cup batter into each muffin liner.
Bake in the oven for 13 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.
Notes
These would be great with blueberries added in!Making Oat Flour: If you are making your own oat flour, pulse rolled oats in a blender until mostly ground. I prefer grinding my own oats versus store-bought oat flour.If you are eating this as an adult snack, they are really good when they are served warm with melted butter and a hot cup of coffee or tea!
