Vegan Blondies

These Vegan Blondies With Chickpeas are gluten-free, protein-filled, and ready in 30 minutes! They're easy to make, refined sugar-free, and so delicious!

Ingredients
 

  • 1 (15.5-ounce) can chickpeas , (drained and rinsed)
  • ½ cup salted creamy peanut butter, (if you're using unsalted peanut butter, add ¼ teaspoon salt to the blondies)
  • cup maple syrup
  • 2 teaspoons vanilla
  • 2 tablespoons chia seeds
  • ½ cup almond flour, (or Gluten-Free 1:1 Baking Flour)
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ cup chocolate chips + more for topping, (optional)

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line an 8×8 baking dish with parchment paper and set aside.
  • In a food processor, blend all of the ingredients except for the chocolate chips, until the batter is smooth.
  • Add in the chocolate chips and pulse the food processor a few times to mix them in.
  • Next, pour the batter into the baking dish and spread the batter out evenly. Top with more chocolate chips if desired.
  • Bake in the oven for 20 minutes.
  • As eager as you may be to dive right into the blondies when they come out of the oven, I recommend you allow them to cool for 10-20 minutes first. The blondies will be quite soft when they come out of the oven, so this gives them a chance to firm up a bit. They will still be soft after they cool, they will just be easier to cut.

Notes

Store the blondies in an air-tight container in the fridge for up to 5 days.
To keep the recipe refined sugar-free, you can omit the chocolate chips or use no sugar added chocolate chips (like Hu Chocolate or Good Sam Foods).
