These Vegan Blondies With Chickpeas are gluten-free, protein-filled, and ready in 30 minutes! They're easy to make, refined sugar-free, and so delicious!
¼cupchocolate chips + more for topping, (optional)
Instructions
Preheat oven to 350 degrees Fahrenheit. Line an 8×8 baking dish with parchment paper and set aside.
In a food processor, blend all of the ingredients except for the chocolate chips, until the batter is smooth.
Add in the chocolate chips and pulse the food processor a few times to mix them in.
Next, pour the batter into the baking dish and spread the batter out evenly. Top with more chocolate chips if desired.
Bake in the oven for 20 minutes.
As eager as you may be to dive right into the blondies when they come out of the oven, I recommend you allow them to cool for 10-20 minutes first. The blondies will be quite soft when they come out of the oven, so this gives them a chance to firm up a bit. They will still be soft after they cool, they will just be easier to cut.

Store the blondies in an air-tight container in the fridge for up to 5 days.To keep the recipe refined sugar-free, you can omit the chocolate chips or use no sugar added chocolate chips (like Hu Chocolate or Good Sam Foods).
