Quick Steel-Cut Oats Granola

This Steel-Cut Oat Granola Recipe is crunchy, packed with fiber, and has a cinnamon vanilla flavor! It only takes 5 minutes to prep and 25 minutes to bake!

Ingredients
 

  • 1 ½ tablespoons coconut oil , melted
  • 3 tablespoons maple syrup
  • ¼ cup creamy almond butter
  • 1 teaspoon vanilla
  • 2 cups steel-cut oats
  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • ¼ cup dried cherries
  • ¼ cup raw pumpkin seeds
  • ¼ cup pecans
  • ¼ cup raw sliced almonds

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix together the melted coconut oil, maple syrup, almond butter, and vanilla until smooth.
  • Mix in the steel-cut oats, coconut sugar, cinnamon, chia seeds, dried cherries, pumpkin seeds, pecans, and almonds.
  • Spread onto a baking sheet lined with parchment paper and cook in the oven for 25 minutes, stiring occasionally.
  • Allow to cool on the baking sheet for approximately 20 minutes before serving.

Notes

Store granola in an air-tight container on the counter for a couple of weeks.
