Healthier Monster Cheerio Bars

These Healthier Monster Cheerio Bars are a Halloween treat alternative without all of the processed sugar you find in many Halloween treats!

Ingredients
 

  • 1 tablespoon coconut oil
  • ½ cup almond butter
  • cup honey
  • 2 teaspoons vanilla
  • 3 cups Cheerios
  • 20 candy eyeballs
  • 1 ½ tablespoon chia seeds

Chocolate Almond Butter Glaze

  • 1 tablespoon coconut oil
  • 3 teaspoons honey
  • 2 tablespoons cocoa powder
  • 3 tablespoons almond butter
  • ¼ cup + 4 tablespoons almond milk

Instructions
 

  • In a large pot, heat coconut oil, almond butter, honey, and vanilla. Stir well.
  • Add Cheerios and stir until combined.
  • Line an 8×8 dish with parchment paper, pour Cheerio mixture in, spreading and patting it down so it sits evenly.
  • Using a microwave-safe dish, heat all glaze ingredients, expect for cocoa powder, in the microwave for 30 seconds.
  • Add cocoa powder to the glaze and whisk until smooth.
  • Drizzle glaze evenly over Cheerio mixture.
  • Arrange candy eyeballs along two opposite edges of the baking dish, leaving a little room between each pair so that you can cut them into bars once it has cooled.
  • Cool in the fridge for at least one hour.
  • Cut into 10 bars and store in the refrigerator.

Notes

*Instead of making the Chocolate Almond Butter Glaze, you can melt about 1/2 cup of chocolate chips in a small pot, allow it to cool for a couple of minutes, then transfer it to a Ziploc bag. Then, cut a small hole on one of the sides so you can squeeze the chocolate out and decorate the monster bars how you like.
