Gluten-Free Chocolate Chip Oatmeal Banana Bread

Ingredients
 

  • 2 ripe bananas
  • 1 tablespoon coconut oil melted
  • cup maple syrup
  • 1 teaspoon vanilla
  • 1 egg
  • 1 ½ cups gluten-free oats, (blended into a flour)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup gluten-free chocolate chips
  • Vegetable oil spray

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit. Grease a loaf pan with vegetable oil spray and set aside.
  • Mash bananas in a medium-sized bowl with melted coconut oil.
  • Add maple syrup, vanilla, and the egg and mix well.
  • Blend rolled oats in a blender or food processor to create a flour.
  • In a large bowl, add the oat flour, baking soda, cinnamon, and salt and stir to combine.
  • Pour banana mixture into the flour mixture and mix until just combined.
  • Add chocolate chips and any optional ingredients (such as walnuts) and mix in evenly.
  • Pour batter into the loaf pan and bake in the oven for 25 minutes or until a toothpick comes out clean when placed in the center.
  • Allow to cool slightly before slicing.

Notes

To Store: Store in an air-tight container in the fridge for about 4 days.
To Freeze: Wrap the banana bread tightly in plastic wrap once it's fully cooled. Then, wrap in aluminum foil or a freezer-safe container. Store in the freezer for up to 3 months.
