These Fudgy Vegan Date Brownies are a decadent and chocolatey dessert! They're naturally sweetened with dates and are gluten-free, dairy-free, and egg-free.
Preheat oven to 350 degrees Fahrenheit. Line an 8x8 baking dish with parchment paper and set aside.
Soak dates in a bowl of hot water for 2-5 minutes, until the dates are pretty soft. Then, drain the water.
Add all of the ingredients, except for the chocolate chips if using, to a food processor and blend until smooth. Add the chocolate chips (if using) and pulse them a few times to mix them in. Alternatively, you can hand mix them in.
Pour the brownie batter into the baking dish and spread evenly. Top with chocolate chips if desired.
Bake in the oven for 20 minutes, or until a toothpick inserted in the center of the brownies comes out mostly clean.
Allow to cool for at least 5 minutes before cutting and then serve.
