Fudgy Vegan Date Brownies

These Fudgy Vegan Date Brownies are a decadent and chocolatey dessert! They're naturally sweetened with dates and are gluten-free, dairy-free, and egg-free.

Ingredients
 

  • 1 1/2 cup dates pitted
  • 1 1/2 cups blanched almond flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup coconut oil, melted
  • 2 tablespoons maple syrup, (optional)
  • cup chocolate chips, (optional)

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line an 8x8 baking dish with parchment paper and set aside.
  • Soak dates in a bowl of hot water for 2-5 minutes, until the dates are pretty soft. Then, drain the water.
  • Add all of the ingredients, except for the chocolate chips if using, to a food processor and blend until smooth. Add the chocolate chips (if using) and pulse them a few times to mix them in. Alternatively, you can hand mix them in.
  • Pour the brownie batter into the baking dish and spread evenly. Top with chocolate chips if desired.
  • Bake in the oven for 20 minutes, or until a toothpick inserted in the center of the brownies comes out mostly clean.
  • Allow to cool for at least 5 minutes before cutting and then serve.
