Easy Vegan Chili

This Easy 25-Minute Vegan Chili is the perfect addition to your weekly healthy meal rotation! It's filling, flavorful, and so easy to make!

Total Time: 25 minutes

Ingredients
 

  • 1 tablespoon olive oil
  • ½ white onion , diced
  • 2 plant-based Italian sausages , diced
  • 1 cup fresh or frozen corn
  • ¾ cup red bell pepper , diced
  • 1 (14.5 - ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can black beans
  • 1 (15-ounce) can white beans
  • 1 (15.5-ounce) can red kidney beans
  • 1 ½ tablespoons brown sugar
  • 1 ½ tablespoons balsamic vinegar
  • 2 cups water
  • ½ teaspoon salt

Instructions
 

  • Heat olive oil in a large pot. Add onion and sausage and saute until sausage is slightly browned.
  • Drain and rinse the beans and add them to the pot, followed by the remaining ingredients. Stir well.
  • Cover and bring to a boil. Once boiling, lower the heat and let simmer for 10-12 minutes.

Notes

Optional Toppings: Dollop of greek yogurt, shredded pepper jack cheese, cilantro
Serving Suggestions: Serve with brown rice, cornbread, a piece of delicious bread, or paratha.
