Crispy Roasted Green Beans With Slivered Almonds

These Roasted Green Beans With Slivered Almonds are an easy and healthy side dish for the holidays or weeknight dinners!

Ingredients
 

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt
  • Black pepper , to taste
  • ½ tablespoon butter, (can sub with ghee or olive oil)
  • ½ cup slivered almonds

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and spread out green beans evenly in a single layer.
  • Drizzle olive oil over the green beans and toss to coat them. Sprinkle them with sea salt and black pepper.
  • Cook green beans in the oven for 20-25 minutes until they start getting crispy and look like they're starting to shrivel.
  • While the green beans are cooking, melt butter in a small pan over low heat. Add slivered almonds and sauté, stirring frequently, until they are golden brown. Be sure to monitor these carefully so that the almonds don’t burn.
  • When the green beans are done cooking, toss them with slivered almonds, transfer to a serving platter, and serve.

Notes

To save you a dish to wash and something to monitor closely if you're making these for Thanksgiving, you can toast the almonds with the green beans instead of sauteeing them. To do this, spread out the almonds over the green beans after the green beans have cooked for 20 minutes and have them cook together for the last 5 minutes. While the almonds won’t have a delicious buttery flavor this way, they remain excellent tasting.
